I don't believe I have ever encountered a copyright date written in Roman numerals! I have searched through EBAE for a rule regarding Roman Numerals ... and dates ... and have come up with nothing that specifically addresses that issue. All that being said, I believe you are safe to "follow print" and braille those Roman numerals as Roman numerals. Hope this helps.
